Green Chicken Curry

    1 teaspoon coriander powder

    500g boneless chicken, cut into bite-sized pieces

    2 tablespoons cooking oil

    1 onion, thinly sliced

    1 cup bell peppers, thinly sliced (optional)

    1 cup coconut milk

    1 cup chicken broth or water

    Salt to taste

    Fresh cilantro leaves for garnish

Instructions:

1. Prepare Green Curry Paste:

     In a blender or food processor, combine cilantro, mint, green chilies, ginger-garlic paste, chopped         onion, cumin powder, coriander powder, lime or lemon juice, and salt.

      Add water as needed to blend into a smooth paste. Set aside.

2. Cook the Chicken:

       In a large pan or wok, heat oil over medium heat. Add sliced onions and sauté until they become           translucent.

       Add the chicken pieces and

       Cook until they are browned on all sides. Once the chicken is browned, add the green curry paste           and cook for a few minutes, allowing the flavors to meld.

3. Add Vegetables and Coconut Milk:

       If using bell peppers, add them to the pan and sauté for a couple of minutes.

        Pour in the coconut milk and chicken broth (or water). Stir well and bring the mixture to a simmer.         Season with salt to taste. Allow the chicken and vegetables to simmer until the chicken is fully                cooked and tender.

4. Garnish and Serve:

        Once the chicken is cooked, garnish the green chicken curry with fresh cilantro leaves.

        Serve the Green Chicken Curry hot over steamed rice or with naan or roti.
