 Ingredients:

        1 cup drumsticks, cut into 2-inch pieces

        1 cup carrots, julienned

        1 cup beans, cut into 2-inch pieces

        1 cup yam, peeled and cut into thin strips

        1 cup raw banana, peeled and cut into thin strips

        1 cup ash gourd, peeled and cut into thin strips

        1 cup pumpkin, cut into thin strips

        1 cup grated coconut

        2-3 green chilies

        1 cup yogurt

        Salt to taste

For Seasoning:

        2 tablespoons coconut oil

        1 teaspoon mustard seeds

         A sprig of curry leaves

Instructions:

Prepare Vegetables:

    Wash, peel, and cut all the vegetables into uniform, thin pieces.

Cook Vegetables:

    Boil or steam the vegetables with a pinch of salt until they are tender but not mushy. Ensure     that each vegetable retains its shape.

Prepare Coconut Paste:

    In a blender, grind the grated coconut and green chilies into a smooth paste. You can add a     little water to facilitate blending.

Mix Coconut Paste:

    Once the vegetables are cooked, add the coconut paste to them. Mix well.

Add Yogurt:

    Beat the yogurt well and add it to the vegetable-coconut mixture. Stir gently to combine.

Season the Avial:

    In a separate small pan, heat coconut oil. Add mustard seeds, and when they splutter, add        curry leaves. Pour this seasoning over the avial.

Final Mix:

    Gently mix everything together to ensure that the coconut paste, yogurt, and seasoning are     evenly distributed.

Adjust Seasoning:

    Taste the avial and add salt if needed. Adjust the thickness by adding more yogurt if desired

                    Serve Avial hot with steamed rice or alongside dosa or idli.
