Egg Pulao (Anda Pulao)


 

Egg Pulao is one of the rice pot pulao with boiled eggs, basmati rice, spices and herbs. This egg pulao is Comforting and delicious. This pulao is mildly spiced so it is kids friendly too. This pulao is really quick if you have some pre-boiled eggs.

 

About My Recipe

Egg Pulao or Anda pulao is easy rice dish made with boiled eggs, basmati rice, aromatic spices and herbs. It’s simple and tasty one pot meal that you can make in 30-40 minutes on busy weeknights or for unexpected guest

 

INGREDIENTS

ü 1.5 cups Basmati Rice soaked
ü 4 eggs hard boiled and peeled
ü 3 tablespoon oil
ü 1 teaspoon cumin seeds
ü 3-4 black peppercorns
ü 2-3 cloves
ü 2-3 green cardamoms
ü 1 inch cinnamon
ü 1 bay leaf
ü 1 medium onion sliced
ü 1 tablespoon Ginger-garlic-green chili paste
ü 1 teaspoon red chilli powder
ü 1 teaspoon coriander powder
ü ½ teaspoon Garam Masala Powder
ü Salt to taste
ü 2 tablespoons chopped fresh coriander

 

METHOD

·        Heat the oil in non-stick pan and shallow –fry the boiled eggs till light golden. Drain on absorbent paper.

·        Add the cumin seeds to the same pan. When the cumin seeds change, add black peppercorns, cloves, green cardamoms, cinnamon, bay leaf and saute till fragrant.

·        Add the onion and saute light golden brown add the Ginger-garlic-green chili paste and saute for a minute. Add the red chili powder, coriander powder, garam masala powder and sauté till the oil separates.

·        Add the three cups of water and bring it to a boil, add the salt and rice and mix well. Cover and cook till the rice is 3/4th done. Add the fried eggs and cook till the rice is done.

·        Serve hot garnished with the chopped fresh coriander and Raita.
